Long Fu Chef's Knife Style 8123

This is my Long Fu Chef's knife. The blade is 10" long, 1.5" high and very curved. This one is made from 1095 high carbon steel and weighs only 7.3 ounces. It has a visible temper line, and a very sharp 8 degree edge. It is available in other steels (stainless and carbon) and with more general purpose edges if needed.

As with all my kitchen knives, it can be made in a stub tang, full tang, or 3-finger handle design.

Here is a Long Fu made more like my regular chef's knives. It has a 17 degree edge and an American style handle with one of my stone spacers.





Long Fu Slicer Style 8323

This is an 8" slicer made in my Long Fu style from 1095 high carbon steel. It has a visible temper line and the 15 degree edge is ground from one side only. Of course, it is available ground from both sides in the usual fashion and with a different edge angle if you prefer.

Another slicer, but this one with an Ivory Micarta handle made to the customer's specs....



Long Fu Veggie Cleaver Style 8128

A stainless 7 x 2.5" blade with a 3-finger handle of Osage Orange ....
